Rich in Calcium Picadillo

Ingredients

  • 1 lb. lean ground turkey
  • 1 tbsp. minced garlic 
  • 1 sliced green bell pepper
  • 1 can diced tomatoes
  • 1-¼ teaspoons ground coriander 
  • ½ large onion 
  • 1 cup sliced mushrooms
  • 1 tbsp. olive oil
  • Pinch of salt
  • Pinch of pepper
  • 2 tsp. ground cumin 
  • 2 tbsp. of raisins 
  • 2 tbsp. of whole green olives
  • 2 cups of chopped kale

  1. Add olive oil to a pan on low heat, add ground turkey and begin to cook. 
  2. Add the onion, bell pepper, mushrooms, and garlic, stirring occasionally until starting to soften, about 3 minutes. 
  3. Stir in tomatoes, kale, cumin, coriander, salt and pepper and bring to a boil. Reduce the heat and simmer covered for 15 minutes. 
  4. Add the raisins and olives to the mixture.
