Rich in Calcium Picadillo
Ingredients
- 1 lb. lean ground turkey
- 1 tbsp. minced garlic
- 1 sliced green bell pepper
- 1 can diced tomatoes
- 1-¼ teaspoons ground coriander
- ½ large onion
- 1 cup sliced mushrooms
- 1 tbsp. olive oil
- Pinch of salt
- Pinch of pepper
- 2 tsp. ground cumin
- 2 tbsp. of raisins
- 2 tbsp. of whole green olives
- 2 cups of chopped kale
Instructions
- Add olive oil to a pan on low heat, add ground turkey and begin to cook.
- Add the onion, bell pepper, mushrooms, and garlic, stirring occasionally until starting to soften, about 3 minutes.
- Stir in tomatoes, kale, cumin, coriander, salt and pepper and bring to a boil. Reduce the heat and simmer covered for 15 minutes.
- Add the raisins and olives to the mixture.
