Rice with Gandules

Ingredients

  • 1/2 package of medium grain rice
  • 4 bowls of gandules (pigeon peas)
  • 1/2 lb of bacon
  • 1/2 lb of ham
  • 1/2 lb of pork
  • 1 chopped onion
  • 1 chopped green pepper
  • 1 bowl of chopped bell peppers
  • 4 or 5 chopped recao leaves
  • 3 or 4 chopped sweet peppers
  • Pepper powder
  • Cumin powder
  • Oregano
  • Chopped cilantro
  • 5 chopped heads of garlic
  • 1 cube of chicken Bouillon
  • 1 bowl of tomato sauce
  • Cooking oil
  • 1 bowl of stuffed olives
  • 1 shredded green plantain
  • 1 Corona brand beer
  • 2  packs of achiote seasoning
  • 1 pack of mushroom gravy

  • Cook time: 60 minutes

Beer, plantains, and recao. Three ingredients that should be in every Puerto Rican kitchen and will make our Arroz con Gandules as delicious as Lucy’s!

 

Instructions: 

  1. In an aluminum cauldron, cook the bacon until golden brown.
  2. Add pork and seal the pot.
  3. Add coriander, clove, onion, peppers, olives, shredded plantain, and garlic.
  4. When everything is boiling, add ham, pack of seasoning, pack of gravy, oregano, pepper, cumin, chicken Bouillon cube, beer and gandules (pigeon peas).
  5. Add the tomato sauce.
  6. Let everything boil until the pork is fully cooked.
  7. Add the rice and taste.
  8. Add salt if necessary and leave over medium heat until dry, and finish cooking.
  9. Serve with a green salad.
