Pandebonos - Colombian Cheese Bread

Ingredients

  • 1.5 cups of cassava flour (yuca flour, mandioca flour, or tapioca flour)
  • 0.5 cups of precooked cornmeal (masarepa)
  • 1.5 cups of Colombian quesito or Mexican queso fresco
  • 1 cup of feta cheese
  • 1 large egg
  • 0.5 tbsp of baking powder
  • a pinch of sugar
  • a pinch of salt

Pan de bono is an everyday staple for breakfast or snack time in Colombia.  Not only is it simple to make, but a joy to eat!

  1. Blend or mix together all of the ingredients, except the egg
  2. When step one is done and the mixture looks homogeneous enough, add the egg to the mix
  3. Once the mixture looks smooth, make small balls of the mix, about golf-ball size.
  4. Place the balls on a greased cookie sheet and bake at 425 ºF for 20 minutes, or until golden on top
  5. Leave to cool a bit, but you can indulge while warm
