Pandebonos - Colombian Cheese Bread

Ingredients
- 1.5 cups of cassava flour (yuca flour, mandioca flour, or tapioca flour)
- 0.5 cups of precooked cornmeal (masarepa)
- 1.5 cups of Colombian quesito or Mexican queso fresco
- 1 cup of feta cheese
- 1 large egg
- 0.5 tbsp of baking powder
- a pinch of sugar
- a pinch of salt

Pan de bono is an everyday staple for breakfast or snack time in Colombia. Not only is it simple to make, but a joy to eat!
- Blend or mix together all of the ingredients, except the egg
- When step one is done and the mixture looks homogeneous enough, add the egg to the mix
- Once the mixture looks smooth, make small balls of the mix, about golf-ball size.
- Place the balls on a greased cookie sheet and bake at 425 ºF for 20 minutes, or until golden on top
- Leave to cool a bit, but you can indulge while warm
