Dulce de leche stuffed Chocolate Chip Cookies

Ingredients

  • 1 1/2 sticks unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 egg 
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup dulce de leche

Super soft and chewy, Dulce de leche stuffed Chocolate Chip Cookies!

 

  • Mix the softened butter with both kinds of sugar and cream until fluffy (about 2-5 minutes)
  • Mix in the egg and vanilla
  • Combine flour, cornstarch, baking soda and salt in a large bowl
  • Add the dry ingredients, one half at a time
  • Add the chocolate chips
  • Refrigerate dough for 1 hour
  • Preheat the oven to 350 °F.
  • Scoop 1 tablespoon of cookie dough and flatten. Add 1/2 teaspoon of dulce de leche to the center of the dough, and wrap the dough around dulce de leche (make sure to fully cover the dulce de leche)
  • Place on a baking sheet lined with parchment paper
  • Bake for 10 minutes until the cookies are golden brown
  • Allow the cookies to cool for 5 minutes
