Coconut Chocolate Mousse
Ingredients
- 1 can of coconut milk
- 2.5 tablespoons of cocoa powder
- 2 tablespoons of sugar

- Cook time:
- Leave the coconut milk in the fridge overnight so it thickens (do not freeze to expedite process)
- Scoop out the coconut cream into a bowl and leave the liquid at the bottom of the can aside
- Use a stand or hand mixer to whip the cream until you get soft peaks
- Add the cocoa powder and sugar
- Continue to whip until the mixture is combined (takes 3-4 minutes)
- If the mixture is too stiff, add some of the liquid from the can to make it smoother
- Refrigerate and enjoy!
