Almojabanas from Puerto Rico
- 1 1/2 cup of rice flour
- 1/4 cup of wheat flour
- 1 tsp of salt
- 3/4 cups of milk
- 3 eggs
- Salt to taste (usually with a tsp is enough)
- 2 cups of grated cheese (gouda and parmesan cheese were used in this recipe)
- Frying oil
- Serving Size: 15-20
- Cook time: 15 Minutes
Almojábanas from Puerto Rico are fritters made of rice flour and cheese. They are usually served during Christmas parties or special events. They can be eaten on their own, or you can have them with a coffee or hot chocolate as a mid-afternoon snack.
Although they have the same name as a traditional Colombian bread, (which is also delicious) they are not the same. Traditionally, they are prepared in the western region of Puerto Rico and can be found in coffee shops and even some restaurants. But they are best prepared in the hands of grandmothers, mothers or aunts.
- Mix the wheat flour and the milk.
- After about 10 minutes, incorporate the eggs.
- Pour the rice flour, salt, and cheese to form a mixture that is not too thick, not too liquid.
- Combine everything very well, fry by spoonfuls in a pan in plenty of hot oil.
- Once the fritters are golden brown, remove and serve.
